Besides, DS1 would easily be shorter than DS3 if you cut out all the shit parts. I don't think the game would have benefited at all had they have decided to throw in filler and rehash bosses at the last minute just to extend the length of the game.

I don't personally find the pve to be shorter than Bloodborne, demons souls or dark souls 1, though.
As for why I think it's better:
>Bosses
The bosses feel unique from one another, in a visual sense, the bosses feel unique from one another in an atmospheric sense, and the bosses feel unique from one another in a mechanical sense.
The bosses themselves find their place in the world very efficiently, and are explained very well by the games events.
The challenge of the bosses goes up as the player progresses through the game, and fit the acts very well, rather than being frontloaded like bloodborne and dark souls, or just generally shit all over like dark souls 2.
2. The areas:
The area design is largely, sprawling and has numerous applications of shortcuts to represent this, in addition, their is a good deal of variety to them, the village, forest/swamp, the catacombs, the fiery underground lake, the frozen city, the large cathedral, the dungeon, the underground temple, the sky peak, the looming castle, garden and archives and the blackened graveyard.
>The world design.
Although it's certainly less interconnected, the game takes a step forward over dark souls 2 in a fantastic way, the visual reference are constant, from the point up in high wall you can see every single outside location in the entire game apart from firelink, something really unprecedented in this series. From the areas surrounding undead settlement you can see the giants tower, going near the white trees will cause him to fire arrows at you, from irithyll's entrance you can see undead settlement to the right and farrons keep to the back. As well as lothric castle high above everything else.
4. The quality progression and handling.
The game starts off strong, and gets better as you go through, arguably the only drop off points are profane capital, which feels slightly underdeveloped, and ancient wyvern which is unnecessary.
