This is one of the many little things I really liked about the Witcher. Npc's accompaning you walk at your pace. If you run, they will run too at the same pace.
There are exceptions (usually animals, the game has a strange fondness of having you herd or escort some particularly stupid animal like a goat or a sheep or a herd of pigs at one point), in those cases it's on purpose, and usually can be circumvented if you are creative enough (like casting Axii on the animal, which will cause it to follow you directly and at your speed).
