War Thunder if you want the easy casual fun. There are 3 difficulty modes in the game. You don't need flying stick for itexcept simulator mode, but it supports mouse control as well
IL-2 (1946) is great for realism. Stick is requiredBut I somehow mastered it on keyboard when I was a poorfag teenager
There is also Cliffs of Dover with Team Fusion mod, realism, stick, etc
DCS World got some WWII prop planesDora and Mustang, maybe others I don't knowso you can dogfight there as well. Or use modern planes guns. You can guess you'll need a stick for this as well.

I'm not keen on it, I like WWII era. But I think Rise of Flight is plenty. It's got everything a good flying sim needs.

WW1's dogfighting wasn't that complicated in comparison to WW2. Really not a whole lot of performance or potential altitude / speed for a lot of tactics to really work.
