I didn't find him that hard, but I found that unless you're rocking a late game greatshield like Havel's or Yhorm's, blocking is ineffective again him and rolling is really the only way to go.
He was definitely an obstacle for a while though.until I learned you can circle to your right and almost none of his attacks will so much as graze you and his shadow can be virtually killed while he's summoning it

Whenever he swings his placenta around there's a huge dead zone like right in front of him so if you stay right up in his grill a lot of his attacks wont even hit. Killed Nameless King second time (on NG+) yesterday, because I forgot to buy his sweet armor set.
Playing "normally" leveled character after doing SL1 first isn't fun anymore.
My favorite SL1 weapon is Astora's Straight Sword (don't forget +5 Faith Ring) with elemental buff.
Being able to juggle some rings to cast Tears of Denial (Second Chance) before boss fights also helps.

Parrying Pontiff is something I can't reliably do. Small timing/distance mistake, and you are dead.
Also I really hope From Software are going to introduce another way to get Dark Sigils, because I'd like to get all endings with my SL1 character, and simply can't because leveling is mandatory.

For some bosses there are random actions they can do (from their moveset), and some really specific actions they do depending on your distance. If you manage to keep this distance properly, you can make bosses repeat same attacks over and over.
Read wiki article for Old Demon's King, it explains what actions you should do to make him repeat same punishable attack
I guess people who are really good have all bosses figured out, know how to trigger their punishable attacks and react to everything else with dodging.

I play a lot of hard retro, and Contra isn't even ont he list. Try The Quest of Ki if you want a game that pushes your shit in.
Also, Souls games are plenty difficult without becoming tedious. Try playing through without guides, Wikis, or the online system crutches.

What was hard about SoC, I thought he was much easier than Nameless? I did both at 80 with a +10 Fume, and Nameless's dragon OHKO'd me with the fire breath, 2-shot me with his spear that had those weird delayed swings+quick jerky lunges, and he had a fuckload of health. I had to play patiently and only swing once or he would kill me.
I don't remember SoC doing much damage at all and being a lot squishier despite the second health bar.
