It matters because it reflects the world that it exists in. Old Halo armor looked practical and industrial, like something an actual soldier would wear. Thus, it made the world feel more real, like actual people had sat down and thought about how this armor would save the lives of it's soldiers.
But since all of 343's armor is impractical and nonsensical, it makes the world feel silly and fake. That the people who designed the armors didn't care about the lives of the soldier, just what they thought looked cool.
tl;dr, Immersion.
