I think those graphics are simple and easy to look at and understand, that's why I like them. Trying to write off the positives of anything old as nostalgia is typically something underaged cancer that didn't get to experience it does.

this. 32-bit, and to some extent 64-bit generation environments have the satisfying purity of brutalist architecture or bauhaus posters. It always depends on talented level designers of course, but modern games have so much visual noise that it can exacerbate sloppy layouts.
I do have some problem dealing with the shitty frame rates tho. I find playing, for example, old PC games or sometimes emulators easier on the eyes than trying to play a PS1 game on my old fat PS2.

That's L'hiver screenshot you took from imdb page, it changes geometry and takes hq meshes from other games like witcher, the farm houses in your sceen are all redone with high detail, plus tons of extra grass from that dx11 wrapper, dynamic shadows and probably something else i forgot to mention.
