Abyss Watchers for the unique but not gimmicky mechanics
Aldrich for impact as a series fan
Both have great atmosphere as well

I feel like Sulyvahn would've been pretty memorable if I didn't accidentally his entire healthbar with pyromancy
I liked the armor fight and champion gundyr equally, too bad they don't lend themselves well to slow weapons

all bosses in my first time playing took me around 2 to 5 try to kill each of them.
But the dragonslayer was more than 72 counted try
But man , what a fun fight that was you could not predict what that guy was going to do even knowing all of his attacks.
The fear to fall of the bridge , and those two dragons killing you with fire balls.

Champion Gundyr
No bullshit aoes or special effects or death fake outs or whatever
Just pvp against a fast and hard hitting son of a mother. I felt like shit killing him on my second try since I was really enjoying myself but it happened. My second favorite is probably Aldrich just because of the path that leads to it.
