I wouldn't call it "true final boss." But in the first Dead To Rights game, you beat the final boss and then toss him into a big fire. The protag poses dramatically and the credits start to roll, over the scene, and the boss emerges from the fire and tries to grab you. If you don't move, he gets you and it's game over. If you do, then you continue the fight with the boss getting a little more health back.
The first Dead To Rights was a poorly designed trainwreck, but I'll give it some credit for trying a variety of things as opposed to just being the same shootan over and over.
