All you have to do to unlock master is beat the ruby, sapphire, and emerald cups on expert in grand prix though, and then if you beat all of those plus diamond on master you get the AX cup.
chapter 1 isn't even that hard on dolphin or GC
Some tips:
When you boost, wait until you hit top speed and let go of A, and only hit A when your speed has dropped back to normal. The speed drop off will be much slower and you can reach a higher speed if you keep boosting like this.
If you clip the edge of the boost pad you get more of a boost than if you hit the middle of the boost pad.
Most if not all of the missions are easier with max speed
if you change the refresh rate(either from 50hz to 60hz or the other way around) you should find the mission easier, the game seems slower and is easier to get the capsules.
