The main character respawns because they're either hollowed and immortal until they go insane, or unkindled ash and will continue to return to their bonfire.

This makes sense.
You're in your own 'world', that is completely centralized around you. If you die, the bonfire just recreates you from the embers in your 'own world'. That's why if somebody dies in your world, they're gone forever, but can still invade you or even be summoned sometimes. They are still living their own life in their own world.
Common enemies respawn because they're mindless aspects of the world itself. They have no true 'soul' of their own.

this is your timeline, and the sacred bonfire is a locus of time. when you reach a bonfire all of your troubles and stress fade away as it is an intermittent point between the point where you entered the area and when you have successfully beaten the boss.
