NV is the best when it comes to variability and replayability, but Fallout 3 is the best to me for pure nostalgic reasons. I disliked Fallout 4...it didn't feel very much like a Fallout game. Its too dumbed down now.

I like F4 when I don't think of it as a Fallout game
The gunplay is fun and the AI seem to fight for their lives for the most part, and the new relationships with the companions are pretty immersive. The story is meh, but I can appreciate what they were going for even if the execution was shitty. Also, as generic and broken it is by default, the settlement building is a really nice way to spend a comfy night with a podcast or movie, after dosing it with more than a few mods.
All that said, as a Fallout game it is a fucking disgrace.
