I recommend you start with the NES Ninja Gaidens, but if old 2D games don't appeal to you then you can just skip ahead to the 3D ones. If you're emulating then Ninja Gaiden Trilogy for the SNES has better graphics, although it's not really worth hunting down a cartridge because it's too rare and expensive. There's also games for the Game Boy, Game Gear and arcade which are all pretty good, but not really essential.
There's debate over whether to play Black for Xbox and NG2 for Xbox 360, or Sigma and Sigma 2 for PS3, but all of them are good so it really comes down to which console and controller you'd rather use.
Sigma is a little bit easier than Black but has better visuals. Sigma 2 is less gory than NG2 but has a lot more content and you can play as a titty ninja.
Don't bother with vanilla Ninja Gaiden 3 because it sucks ass. Razor's Edge is much better and has more content. I enjoyed it quite a bit.
Ninja Gaiden DS and Ninja Gaiden Z are extra curricular material. They're not very good and I don't really recommend them.

Yes, NG games are great. Just get the Sigma and Razor's Edge versions, they have more contents than their vanilla counter parts and you can play as tits. Online is probbaly dead at this point though.

Been playing 3RE(didn't play vanilla 3) and goddamn this game is bullshit.

Yeah I know you have to be good at the game. I have beaten 1 and 2(Black, Vanilla 2, and the Sigma versions and Plus versions) and I am good at those but 3RE is levels of bullshit especially for the experienced NG players.

The Sigma versions are lacking though.
The framerate is halved and the ammount of enemies at a time is also lowered significantly.

It's not worth owning an Xbox 360 just to play Black and NG2. Also, they considerably cleaned up the visuals in Sigma versus Black. The only reason to play Black is if you are really that deadset on playing the game at its absolute hardest, and Black isn't even that much harder than Sigma. I own both.

The bosses are kind of bullshit in NG3RE, and you are correct that they are damage sponges. I still think it's a decent entry in the series overall, although to be fair my utter disappointment over the original version may have modulated my expectations in RE's favor.
