I love it but fuck I have no motivation to keep playing because I got a shit ton of gold that made me buy everything and anything from levels, to armor, to skills.
Are the expansions good or should I move to oblivion once I finish the main quest?

This. Skyrim isn't really a game. Its more like a digital action figure set. Its got settings and enemy toys and you can customize your hero toy but its not really a game.
It comes with a recommended way to play with the toys but its really boring and lacks any difficulty whatsoever so 99% of people will tell you the best way to have fun with your digital action figure set is to download mods for it aka more toys from the NMM toy store.

Yup, I also have every daedric weapon and missing a few for the daidric armor. Most of that I got from just wondering to caves and ruins on the map rather than doing sidequests because they never gave much good stuff. To be fair thats because I found really expensive weapons and armor early and kinda broke the game

It's dumbed down and the quests are boring.
You can be the leader of every group on the same character and nobody cares.
The "civil war" is basically 5 guys having a hissy fit and random villagers will throw down with a dragon.

I'd argue that's the case for morrowind so far, I have had a shit ton of fun exploring on my own and learning about the world and havent done much sidequests because they didn't feel great. Then again I am just done with the third trial so maybe things pick up for the main quest later

The setting really isn't that interesting and the civil war conflict is completely forgettable. I don't think I've ever even touched it in any of my playthroughs because I forgot it was even going on.
You're also made the super special important guy that will save everything very early on in both the main quest and the guild quests and it's pretty ridiculous, like 1 to 2 quests into every big questline.
In Morrowind you had to do a bunch of shit to even confirm you were the Nerevarine and for guild quests you were basically an errand boy with some occasional important quests to raise up your rank.
Plus dungeon/puzzle design hasn't really stepped forward all that much since Morrowind.
Vivec was also pretty neat to walk around and there's no settlement on that scale in Skyrim.
Also important NPCs weren't fucking EVERYWHERE. You could kill anyone if you tried hard enough in Morrowind.
Also less scaled loot and enemies, and a lot of the high level armors and weapons are pretty rare and you have to work for them.
And magic sucking, enchanting being limited, and spell crafting being non-existent is just a complete step backwards, and they've also removed some spells from the previous games for no reason.

In Morrowind you do a lot of shitty fetch quests but it feels satisfying, eventually, when you get to the top

The main quest line in Morrowind is better than both Oblivion and Skyrim IMO, because it sends you to more dungeons and slowly becoming the Nerevarine is pretty cool. It feels like you earn your "chosen one" status, kinda like becoming Sheogorath in Oblivion. The side quests are best in Oblivion, I think, because the narratives are very well-crafted and there's a lot of funny/cool scripted events. Morrowind has some good ones too, but I think they aren't as fun on multiple playthroughs because they aren't as cinematic as Oblivion's. Skyrim is great for graphics and character models, which makes it the best waifu simulator, although it's lackluster compared to the other two in the other departments. Each game has something that draws me back to it every now and then.
I'd mention Daggerfall, but it's different enough and old enough that it doesn't compare well to the newer games. Kinda like raisins vs grapes. Both good, and technically the same thing, but still pretty different.

Oblivion is kind of a in-between of Morrowind and Skyrim. I liked the idea of the main quest because you're not really the chosen one, you're just the guy chosen to help the actual chosen one. Shivering Isle is also pretty fun.

Multiples more of a demographic probably played Skyrim than Morrowind, and as such, Skyrim still has the combat of chopping wood. That's plenty of reason for it to get criticized on /v/.
