How come in Uncharted 3, Drake had Chuck Norris levels of fighting skills, but in Uncharted 4 he gets his ass kicked a lot?

Except everything in Uncharted 3 carried over to Uncharted 4. Just because the events of Uncharted 4 didn't get explained in Uncharted 3 doesn't mean its non canon.
Besides plenty of elements were foreshadowed in Uncharted 3. The whole Nathans family part came from Uncharted 3.

In Uncharted 4 Nate tells Elana that after he believed his brother died, he blamed himself for it and just never wanted to bring it up again. So the stories he told changed to not include Sam.
Uncharted 4 also has an entire sequence of gameplay that is actually just a lie and never really happened, so it can be assumed that the parts in Uncharted 3 where you play as kid Nate are just Nate remembering or retelling events without including Sam. Same as how in Uncharted 4 it explains how they adopted the name of Drake. Nothing is non canon, they've just added this whole new layer of narrative over the top of everything.
