Depends on the boss.
Sometimes fights against multiple enemies work better in a pair. You can solo Ornstein and Smough, but most people do it with the poor AI getting caught up on the pillars and each other. Abyss Watchers was probably the first multi-enemy fight where the multiple enemies felt like they were actually aware of each other, and that's only because they fought each other. These fights are harder alone, but not necessarily better designed.
Plus, bosses like Wolnir or Greatwood have such massive sweeping attacks, that the individual person they're targeting makes little difference. Small bosses who focus on one target are sitting ducks for the attacks of other players, but a large boss can easily hit targets it wasn't aiming for.

I summoned on my pyromancer character for pontiff and it didn't make a difference, even though I took most of the aggro and my summon did like probably 300 damage total, I still absolutely destroyed him with great chaos fire orb, it pretty much immediately destroys his copy while doing tremendous damage to him.

I did actually feel bad about having to parry Pontiff in order to get past his first phase without being two-shot. Equipping a shield alone felt like blasphemy, since I was going with a full dual-wield build.I had 15 Vigor at the time and was getting bodied.Could argue that a less skilled person wouldn't be able to parry him regardless, but that still doesn't change the fact that I felt bad for parrying. I've never played a Souls Game so have no idea if the OP is right but I play a lot of shmups and let me tell you, if you beat the last boss with more than one credit you didn't really beat the game. DaS3 is much faster paced and frenetic - similar to Bloodborne, whereas DaS2 is closer to a polished DaS1 formula. Miyazaki's disciples were a little too afraid to step too far out of their master's shadow. The DLC's excellent, which can be said of any of the Souls games.I am greatly looking forward to DaS3's DLC
