FFVII was a tech demo purely designed to show off polygons. It was the flagship title that made everybody obsessed with graphics, and it cemented Tetsuya Nomura's position as one of the worst people in the industry. It did nothing to advance gameplay in the series and look where we are today?

The tone of the games certainly shifted with 3 but 4 fundamentally altered gameplay and was a more mainstream success. At any rate 5 has not been the greatest influence to kick off anything, it just iterated on 4.
A good game doesn't do anything harm.
If it weren't for that game, the bad developers would have just made even worse games.
