I like Monster Hunter but I'd rather play it on a bigger screen and with two sticks like the Vita or any consoleor even PC without emulating.

Nintendo moneyhatted it, plain and simple. They paid for the online servers, marketing, and they published and distributed MH games in several regions. It's not on home consoles or PC because Monhun only sells the insane numbers that it's known for in Japan on handhelds.
Not even Nintendo wants to make Wii U games anymore, so imagine how 3rd parties feel about putting their most important IPs on it.

They primarily market for the Japanese which own WAY more portable systems than home consoles because most and care way more about the actual game than the grafics.
On top of that, it was a conscious decision by Capcom to develop on the 3DS because it was the more popular handheld and much cheaper to develop on.
But hey, there's always Frontier :^)
