I like the music in Sonic 1 and 2, but I that's partly because they epitomized the unique sound of the Genesis that's incredibly nostalgic. However music on SNES games were just flat out better quality and did a better job of mimicking instruments than Genesis ever could on top of the fact that the music created was just better.

Not all do-- the one I've had since 1994 still looks the same shade of grey as it did when I bought it. It's isolated to certain production years.
Some people thought it was UV exposure, which can degrade plastics over time-- but the yellowing happens both inside and outside the case and doesn't affect the plastic in the top center, so light isn't the main factor.
The hypothesis most people are running with is that a few batches of cases were exposed to higher-than-normal levels of the chemicals they spray the cases down to make them flame retardant. Those chemicals speed up the plastic degradation and caused the yellowing.

Maybe the PS1 since it was basically a next-gen continuation of the SNES in terms of the types of games that were popular for it.

Sonic games are a force to be reckoned with music wise, but I wouldn't say the music is that good anon.
Why exactly are people saying PS1 and PS2? Is it just because they have thousands of games or are there any soundtracks even worth mentioning outside of the Final Fantasy games?
I mean, I guess Gradius 5 had some good themes, but I can't think of anything else.

The SNES had some amazing music. But plenty of other consoles (and PC) also feature great music. Even the original Game Boy had a couple dozen games with amazing music. And on a sound chip even weaker than an NES. Its amazing what they pulled off for games like Kid Dracula, Metroid II, Mario Land and Balloon Kid.
