Astora GS is an excellent choice but I would go heavy zwei so you only need to focus on strength since you're low level. Also use a caestus for parries, L2 mash when you're getting R1 spammed and bingo.

rolls depend on your shield use, but generally only idiots fat roll. 70% or lower is key

Yeah, before the worldwide released the weapon was just too OP in pvp on the Japanese version. 2 hits and you're pretty much dead. The nerf pretty much fixed it fine if you ask me, it's still one of the best ultra-greatswords in the game with one of the most flexible movesets and can easily hit 800+. Yeah i would say it's better than the DGA, if you know how to use the Fume correctly that is.
Pro tip: The two-handed charged R2 attack can end most fights almost instantly if you learn how to correctly aim using your left analogue stick while charging when not locked on, it seriously works wonders.

The god tier str weapon is black knight greataxe cuz of it's massive damage and skill, it's a one shot kill with hornet ring on parry.
All of the UGS are fine in PVP and you can pick the one you like.
With UGS in PVP you must trade hits and abuse your hyper armor, that's basically all there is to it. Also they can't parry your 2hand R1 and R2.
Also don't use any regular greatsword weapons for PVP ever.

No problem, just make sure you have enough stamina to use allow 2 swings, and at least 1 or 2 evading rolls, you can easily get destroyed if you don't have enough stamina while using this weapon.

Frost is great for the freezing effect. Walk behind them and get backstab damage.
When games implement the slow effect, then you drastically reduce the enemy DPS or even damage-per-turn.

Not the original poster, but the estoc is a stupid good weapon to begin with. It uses low stamina for light attack and it's heavy attack is a slash as opposed to a piercing attack which allows you to hit multiple enemies. Putting less points in stamina will let you put more points in other stats.
And if you don't know already, the raw gem takes away scaling and greatly improves the weapon damage. I'm assuming if you're running mage, then you're not putting points into dex or strength so putting a raw gem in it makes sense. Or if you're running INT or FAITH then try crystal or light gems, repectively.

Frost is not great at all in this game. The enemy won't let you hit them enough for the status effect to begin. And it sucks that luck doesn't increase the frost buildup.
I love frost in other games, though. I just use it out of principle. But my fully upgraded frost rapier will be ready when they improve the weapn/status effect.

I infused the brigands daggers with bleed and it's kinda alright, in fight clubs I can L 1 spam if I'm lucky and they have no way of partying it.

How is this Havel weapon?

The magic and fire absorption bonus is really nice. With a black knight shield and dragon tooth even strong fire attacks do almost nothing to me.
Current setup:
Dragslayor Great Axe
Dark sword
Estoc
Used to use a broadsword for entire first playthrough.
I want to switch to a curved great sword or great hammer.
What would be a good one to use?

Its not too bad. The absorption bonus that >>337179337 mentioned is pretty handy. Its also a bit of a niche weapon since most people with that str level would be sung FUGS, DSGA, BKGA or Yhorm's Machete. Its slower than the others though.
