Never played a Souls game before 3. I've made it up to the catacombs. Was able to solo every boss and miniboss without any trouble, barring Deacons and Abyss Watchers. I died 3 times to those and...wait...you can summon 2 NPCs to easily aggro the bosses while you R1 spam them right in the back. Both times I've summoned I've won first try and took maybe 2 estus sips.
People say "hurr durr summoning phantoms is cheating/easy mode". Nah dude. Summoning is a tool given to you to use in the game. Same as estus, magic, and smiths. If you want to purposely handicap yourself go ahead but don't disillusion yourself into thinking that means the game is naturally hard. You're just making it hard on yourself.
