Miracles don't even involve the gods. It's backdoor sorcery. You use your faith (in anything, even yourself) to draw upon the power of your own soul to cast a long-form mnemonic spell in the form of a story. Hence why you can use miracles to kill the gods that the story is about. Hence why there are intelligence-scaling talismans and faith-scaling staves. Two roads to access the same power.

Theres clearly science involved with sorcery, considering how many different academies and scholars there are dedicated to teaching, preserving, and developing new magics in the Souls canon
Probably shit like astrology and maths most like but also other shit like alchemy and knowledge of elemental compositions of many different compounds or elements would be necessary, as much of sorcery is manipulating energy and matter into new shapes or forms.
Pyromancy is likely based on the same principles but is mostly self taught due to the swamp's primitive, reclusive culture. Although in the 2nd game sorcery schools are said to also dabble in pyromancies.
