If you miss a stun with the other characters you miss it until the cooldown is off. Mei is the only character with a constant slow/stun effect on her primary weapon. If you miss a little bit with it it doesn't matter at all because you can just keep spraying them until they freeze.
Reinhardt can miss his charge and it repositions him and his other stun is an ult. Roadhog is an aimed projectile with a cooldown, McCree's is half the range of Mei's primary and on a 8 or 9 second cooldown, etc.

I've been playing the beta for a couple days now and I'm starting to notice that there's a few maps that have one major chokepoint with no option to flank in any meaningful way. That Japanese map is the biggest offender in my mind, with the two capture points. The last point iirc is just a giant room with one entrance into it so it's a total meat grinder for the attacking team. A single turret and a bastion makes it total mayhem to deal with.

Ice spray takes enough time to freeze for experienced players to use movement abilities to get out of, if they don't see you coming and unload into your head. Characters above 300 hp also don't get dropped in one freeze-headshot cycle
Icicle spear has a slight lag that makes distance shots hard to pull off without amazing reads.
Icicle in best case scenarios lets you 1v1 characters who normally drop you, but in bad scenarios against experienced players, they cut off routes of escape and attack as soon as you get out, or outright burst damage you down (all offensive options, Junkrat). In worst case scenarios, you get set up on while you're immobile and immediately die when you come out.
tl;dr: learn2fight Mei, if you're getting fucked repeatedly, you're not good at battlefield assessment.
