I think the Uncharted series is alright. I have some personal gripes with it but I can still enjoy the game. The Uncharted series isn't cutscene heavy at all.
Take Max Payne 3 for example. That game has about double the amount of cutscene time and they're all unskippable. You can draw similar comparisons for many many games and Uncharted series will generally not come out on top.
Do you know why? Because the goal the devs set is to make as much of the game playable, to make what other devs turn into cutscenes into gameplay instead.

Cinematic gameplay falls in that uncanny valley between immersion and influence. It's all done on cue, like special effects in a movie. It's happening on because of you, yet at the same time you're not actually making it happen, and it's not happening on its own either. It's an awkward Truman Show with your character as the star.
