To be honest it's more like advertising than making a joke. I don't eat ice cream enough to identify specific brands and laugh whenever they appear in games I play, and even if I were it's not a particularly good joke either. There's hardly any depth to the nice cream guy other than he sells ice cream and that he's nice, the character solely exists for the punchline. The antagonist built up over the course of the game is revealed to be a sympathetic villain acting out of grief and get upstaged by the real antagonist who hijacks the macguffin to become a grotesque monster.
Here's an example. Sonic the Hedgehog and Dragon Ball are two radically different franchises that tell different stories. Yet they have blatantly similar plot elements and characters that one could think Sonic is a ripoff of Dragon Ball.

Hellfire Mantle is also pretty good, but I'd say Ultimate Truth and Grave of Being just edge it out of top final stage themes. Nuclear Sect doesn't even come close to the top Final Boss themes, though. It has to compete with Septette for the Dead Princess, Flight of the Bamboo Cutter, Emotional Skyscraper, and especially Little Princess and Pure Furies

Clichés are the integral to any story the same way basic elements are. This is besides the point, even in a narrative sense the characters in Undertale are handled the same way as Super Paper Mario. Undertale is a deconstruction, but it's also an action adventure with light rpg elements, and it shows where they got the elements from.

Did you even play the game? The leveling system, lack of trading, acknowledgement of saves, and combat system are examinations of trite rpg gameplay. It's up for debate on whether it was effective or not but it is disingenuous to say that Undertale isn't at least an attempted deconstruction.
