You can't please everyone, honestly.
NG+ was pretty easy just because you have endgame gear already, it's just a good opportunity to grab all the loot (+1 rings, questlines you didn't do in NG, etc.) you can, if you're a completionist.
NG+2 and onward is great though, you really have to optimize your playstyle and____git gud___. I was using a +10 heavy Greataxe (45STR) before, now I switched to a refined Murakumo and respecced to 40/40 to get great damage and the ability to consistently hit groups of enemies with big damage.

Does anyone even wear any of the status resistance rings? They're completely useless. The only time I'll ever even considered wearing one is when I enter inevitable poison swamp area in every game, but then I realize there's no point because I could just carry like 15 purple moss clumps and be fine.

mobs do maybe 20-30% increase damage but you've got 300% more eHP + 15 estus from the get go
you can facetank anything in NG+ and rape every boss with a 2h STR build

I had an almost fully upgraded Wanderer set in NG and it was damn near broken. Only bosses did any significant damage AND I could fast roll. Shit was god tier for Blighttown and for rushing to fog gates.
