I feel like I'm the only one who finds these guys to be pretty much the easiest enemies in the game.
They have like 4 attacks total and each one has a unique and lengthy windup. The only way you can have trouble with them is if your weapon is just so slow that you can't react to these windups, but even then your weapon will be strong enough to break their poise as long as you aren't attacking mid-animation.
The lothric knights and cathedral knights were a lot tougher imo, with pontiff knights being 3rd in toughness
