You missed one of the most emotional bossfights in the game. Refusing Gehrman's offer gives you an extra boss fight where you have to fight him, since he thinks only a hunter gone mad would want to live through his fate: To live in a neverending dream for all of eternity. You also get his scythe for NG+ as well. If you beat him, the Moon Presence, who is basically Nyarlathotep comes crawling out of the blood moon, cripples you, and turns you into the next watching of the hunter's dream, and the cycle continues anew.
You know how after you beat Mergo's Wet Nurse, you got an umbilical cord? There's 4 in the game, but if you get and consume at least 3 and fight Gehrman, after you beat him, you'll get to fight the Moon Presence instead. Kill the Moon Presence, and you end up as a newly born Great One, looked after by the doll before you mature and ascend humanity into a new era with you at its helm.

The main thing the song has going for it is the juxtaposition of the lyrics and the tune itself. The lyrics are somewhat dark and serious, about the miseries of war and the balance of power, but the music is upbeat.
