I picked up the ps4 version of REmake the other day and I'm loving it so far. There are a couple changes in layout, but most of the mansion feels familiar.
However, going back to fixed camera angles and not being able to stun enemies and suplex them is really fucking me.
The series changed genre, and some people didn't like that. But the fact remains that Resident Evil 6 is a really, really, really good game.

Like Leon was pretty much Helena's sidekick for a majority of his segment, or an agent being shoehorned into Ada's chapter and being unable to do anything to advance the plot. Despite relying heavily on horror tropes that were ground into the dirt by film---Resident Evil was the first true "horror" game for the mainstream. By the time 4 rolled around, Resident Evil and it's brothel of demonic offspring had driven the survival horror genre into the grave. 4 tooke the horror themes and added in accessible gameplay. It was a mega hit. And they've been chasing it hard since.

Is auto action a skill or an option? I've personally never had a problem completing qtes or counters, but my partners often do. And well, that there's a lot of qtes to complete compared to 4-5.

Options menu. Enabled by default on PS4/XBO, along with raised FOV sliders. It only affects instadeath ones like getting run over by a train or fighting the fish boss and stuff like that. You still have to git gud at melee and counters.

RE4 was also still a bit spooky and had a dark as all hell atmosphere you could still see its survival horror roots. RE5 is when things went full retard and it became a full blown action game also

The original RE1 is also one of the all time great games.
The RE games are so good because they popularized survival horror and to this day are still the biggest survival horror games in the industry. They did zombies better than pretty much any other game out there. Zombies should be a threat. Not easily slaughtered.

2 has a different cast of characters, so you could. You'd be missing out on references though, like the scientist that was "dating" Ada. Although, you should play all of the mainline ones, since they're good games. Just be prepared to play action games once you go past 3.

5 plays similar to 4. It's ok solo and great if you have a good human partner. Going from 4 to 5, I really miss the merchant, Leon's one liners and the attache case.
6 Is a mixed bag, it was pretty fun in the early days since people were still playing and it was neat to play in story intersections. But you're plagued by quite a bit of qtes and nonsensical shit like fighting a dinosaur from a train.
