It's neat to see the tricks that can be done, but that doesn't mean they'll be useful all the time (or even most of the time). Yes a dash or two will be nice in raiding or arena, but you certainly won't be doing tripledashnoscope360backflipglideintohomeplatecheersforeveryone in like any raiding or arena situation.

Optional stuff that you won't always need adds flavor, in my opinion. Before Cataclysm we had a lot of different spells, not all of which were useful all the time, but it was nice having a big bag of tricks to use.

You're right that there's a balance to be struck, but I think most people agree with me when I say that WoW has become too homogenized, and simplified spells are a part of that.
Being paralyzed with options also isn't nearly as big a problem when someone is leveling their character from beginning to end, instead of buying a fully leveled character.
I still remember world travelling as a low lvl warrior, using Charge+Hamstring on the mobs in front of me.
