It was music jobbing as ambiance and it worked pretty damn well doing it. I'd argue all subsequent souls series music exists as more of an accompaniment rather than complement to what's going on.
In short, Dark souls has better music, but Demon souls makes uses of its music to directly immerse and build tension.
