I haven't played it but all bosses in Dark Souls are weak to a certain weapon type or strategy. Not all loadouts are balanced in terms of ease against all bosses, you need to switch it up when something gets too tough.

i lucked out and beat the pontif on my second try solo. actually i didnt mean to do it solo, but the guys i brought in died before they could even land a single hit on the fucking guy...

The problem with DS3 enemies in general is there's no proper way to counter the endless stream of attacks because placement doesn't matter due to the absurd tracking. You just have to roll until they stop and hope you have enough time to get in one attack before they start again. It's fucking boring.

Stop meta building your first playthrough. Go offline and do quality, das3 is the absolute best in terms of being able to change playstyles often. Its rewarding and fun and helps a lot when you decide what meme you're gonna use for your pvp build later on.

There's no balance between the types of enemies any more, it's just an endless steam of attacks even if it's an anorexic goblin with a stick that looks like it has trouble standing up. I remember the 'holy shit' moment I had the first time I faced one of the skeleton dogs in tomb of the giants, but now every enemy acts like that.
I don't know what made From lose sight of what made their earlier games so rewarding to play compared to Souls 2 and 3. Maybe Namco wanted to play up the 'it's reeeeally hard!' angle for marketing.
