Unless you're a total fucking mouthbreaher, it isn't possible to be this legit terrible at a game you're just starting up to the point of running right into attacks unless you literally have never touched a video game ever.

From the the looks of it many of the bosses seem like they will play like stages do and I'm hoping that the developers designed this game so it's not just your standard boss rush.

You know Megaman had levels right? Those things you had to get through before teaching the boss room? They said they added non-boss playforming levels to the game, but with none previewed and the game's world being this boring freewalk area I can't see that addition helping much.

Yeah, I've only beaten every Megaman and X game
And every Megaman fan agrees that the levels are fine but the bosses are the bread and butter, so if Cuphead doesn't/didn't have levels, but instead had a large number of quality bosses then I don't see what the problem is. If it is a problem for you, then this game isn't for you, simple as that. Don't sit here and play armchair game designer

Every boss has like three or four phases too. All of them last a few minutes and seem to take experience to beat on the higher difficulties.

Plus we haven't seen the platforming stages.

Every boss is hand animated, has a bunch of different forms and seems to have a pretty wide variety of animations.
Doing all of that with only a handful of artists is a really time consuming task. It's the same reason Lab Zero has to ask for so much money.
