Well I haven't unlocked that much customisation stuff yet, but you've got quite a few visual options and you can change your cars height options. (As in make the back higher than the front or vice versa)
Then you've got your standard car upgrades and stuff, as well as tuning.

That seems to be wrong, you just have to unlock the parts to tune your car further.
Although some might actually have less, Out of the 6 I've had every car has about the same tuning options.
