Are you talking about how a Witcher eventually gets killed? Well like 95%of the wolf witchers died at the battle of Kaer Morhen. The only ones who lived where away and had no idea how to make more and that was like a while before the events of the books and games so there wasn't that many left. Geralt, Eskel, Lambert, and Vesemir are the only Wolf Witchers left. Coen might have been a wolf,cat, or griffin for all we know. There was also a another cat Witcher operating in the newest book but those are the only named Witchers we know that are working during the timeline of the books. The game adds in more but the Viper school also went to shit and got destroyed and now we know the cat school got destroyed as well. When you are hated by a lot of people and then programmed to train and kill monsters since you are a toddler and made to think that's all you are good for then it only makes sense that one day after fighting hundreds of battles that you will finally perish in one.

There is quite some lore rape in the games so I'm glad it's a somewhat "canon non-canon" continuity instead of a straight up 1:1 adaption. That higher vampire in Novigrad for example would've shredded Geralt in seconds if the game would follow the books more closely. Also it's kinda weird how they show off magic. Like in the books casting fire from the skies is an extremely difficult and elaborate spell that can completely backfire at any moment while in the game Triss just fires it off like nobodies business. Meanwhile Geralt slays mages by the dozens whereas in the books one above-average mage defeats him in melee(!) combat.
