It's good but I'm sick of Souls games idea of NG+. Going through the DLC in Dark Souls 2 in NG++ was already too much of a nightmare.
Difficulty difference between NG and NG+1 and NG+2 is minimal. It's more or less just a second and third playthrough, except you loot larger hard souls and there's extra rings scattered about.

I always do this, but in previous games there's always a point where you can't level up enough to still feel confident against the enemies, let alone bosses.

Darkmoon isn't that bad if you're level 140 ish. I got all 30 in a few days.
Wolfgrass was fucking annoying but at least it had three enemies that drop it immediately outside of a bonfire and they die quick.
Sunlight covenant, getting 30 is cake. You should be at more than that because being a phantom and helping people is kinda fun.

Well, Weed was pretty easy. I finished them relatively quickly. Dregs were easy too. I didn't finish Medals, but they seemed to have a high drop rate than the Ears.

Why is this a surprise?
You had to go into NG+2 in the other games as well. Bloodborne is the only one you could do in a single playthrough (and that required savescumming for the endings).
NG+ is easier than NG and since you know your way around it takes about 1/4 of the time.
The only painful things are Watchdoges and Dorkmoon Covenant items because Warchdogs only get summoned around or below level 30 (and even then it's broken for some people) and Blue Sentiential/Darkmoons just don't get summoned, ever. It takes up to dozens hours of grinding to get the items from Ghru/Silver Knights. Another playthrough is nothing compared to the tedious grind.

You do get the achievement for simply having the rings.
Adding it to your inventory is what checks it off the list, it's easier to program that than to program some sort of asinine check-double-check system that analyzes the method you acquired a ring.
My level 120 couldn't get the bladegrass stuff for the wolf covenant because he was way out of the soul bracket. I made a new character, kept him at +2 & 30 and earned the wolf ring. I gave the wolf ring to my friend, he gave it to my main account and bam, I got the last ring I needed for the achievement.
