Both are viable in DaS2, dodge roll is better if you can master it, but the enemies track you like hell so it can be difficult to use properly.

Also note that upon killing the boss and pulling a lever you'll be transported to Lost Bastille without any way back except bonfire warping, so make sure you finish up in the Wharf first.
