One of the reasons why mario maker has those limits its because decided to base the entire level geography structure on smb1 thats why the no slopes thing.
With a unified 3d gfx only style you can reduce almost all limitations.

Don't start with Super Star, save it for your last /vr/ Kirby.
Dream Land > Adventure > Dream Land 2 > Dream Land 3 > Crystal Shards > Super Star Ultra
Whatever games you play after that are up to you, I recommend going in order of release. I wouldn't call the remakes improvements, personally, but go with Ultra if you can't find a friend to play Super Star with. Nightmare in Dreamland isn't very good compared to Adventure, go with the original or better yet the 3D Classics version.
Play Dream Land 2 on an emulator that supports Super Gameboy, like BGB

It's a bit faster paced, almost twice the field of vision, it has really good backgrounds and forgrounds that make you feel like you're traversing Dreamland, instead of running by stock landscapes
Also, personally preference, but I liked the originals' sound design more.
