Sarah is easiest.
You can prioritize easy looting areas for suits.
To bang Red you are pretty much required to avoid getting disemboweled by deathclaws.
Also, Sarah swings both ways, so more characters have access to her.

I just did it for the first time. The rewards are okay and it's not terribly difficult. Plus it gives you a reason to go out and explore.
The biggest problem I have with NV is how it railroads you into the main quest. The main story is actually pretty short and you can blow through it in like 3-4 hours. Depending on who your choice faction is, you barely need or are expected to explore at all.
How most people play:
Goodsprings -> Primm -> Nipton (+ Mojave Outpost) -> Boulder City -> The Strip -> Talk to House + contacted by NCR and Legion.
Then at this point you can choose one of the big three factions and you're practically done with the whole game. A few quests later and you're listening to the end credit.
Fallout 3 was similar, I always felt myself rushing through the main story. It felt like I was really needing to follow my dad's footsteps quickly, plus all the Enclave shit made the situation feel so desperate.

I use a mod that changes Very Hard mode from 200% enemy damage/50% player damage, to 300% enemy damage/100% player damage.
Makes battles tense, fast, and difficult without turning the enemies into bullet sponges, or making you feel like a weakling even at level cap.

I use a headshot mod. Makes most enemies die with a single headshot, but it also makes you die with a single headshot. It makes battles a lot more tense, since most enemies start shooting wildly even when you're 50+ yards away. The Desert Rangers were their own faction that merged into the NCR. They had their own uniforms, values, customs, etc separate from the NCR. They've also been around since the war. They don't look down on ghouls the same way, and in fact a bunch of them are ghouls.
That being said there are some Ghoul NCR rangers at one of the stations...whichever it was that was near a bunch of super radioactive craters towards the southeast. Considering the state of the world, makes sense they'd let some in to operate in irradiated areas.
