Just beat it. I play a lot of action games, Ninja Gaiden DMC etc so it didn't give me that much trouble. I killed boat oni my 4th try I think and nue my 5th.
It's a fairly challenging game though, I died a bunch early on pulling more than an enemy or two. I also dumped stats into dumb shit, once I started putting them where my weapon wanted them to go I started fucking stuff up pretty quickly.
Overall solid game looking forward to the release, I really hope they don't tone it down because some people have shitty hand eye coordination.

Do a combo and look at your KI gauge, part of it turns red and slowly fills up again, you can press R1 at any time to get back that amount of KI. Middile Stance= Balance attack and evasion, Best blocks with most of the parrysa and can dodge out of attacks for a small cost
Low Stance = Lowest damage but has the best dodge and attacks the fastest, good for hit and run. Can dodge out of attacks for free.
Remember to press R1 after every combo to get back some stamina and never run out of stamina, there's no stamina debt and you are very vulnerable when in the Red.

Level does matter but skill is much more important. Although with good gear it gets a lot easier. I doubt that you would 2 shot kill enemies in 2nd level with starter gear. But you can 2 shot kill them with good gear though.

Basic shurikens is just for baiting or finishing off, fire shuriken does like 80+550 dmg + 57 burn dmg per tick and ticks like 40 times or so.
