Then I remembered how unfair summoning is.
Beat every boss under 3 tries except for champion grundyr and nameless king (the only 2 bosses in the game that can even be considered "hard"). Grundyr is definitely the hardest in the game since you can dodge his attack perfectly and still get hit, plus he has combo moves that juggle,and an instant shoulder dash that tracks you. Nameless king is more annoying than hard. Id even say he is only mildly difficult because his attacks are so easy to dodge and telegraphed. Thr only problem is that nameless hits hard for most your hp . What makes him annoying is having to fight the dragon every time. If the fight started off at nameless every consecutive time than nameless king would be one of the easiest bosses imho.

I needed maybe 5 or 6 attempts for pontiff, I was able to more or less guess at what he's gonna do, space myself properly and let a charged heavy attack rip. That plus some roll stabs killed him for me.
With Lorian, I can get to the 2nd phase with roll stabs every 3rd attempt or so and then he just destroys my ass, I can maybe get one attack off without getting punished.

Not really unless you're seriously overleveled. I did both Pontiff and Princes the other day at SL35 for my twink and Princes are considerably harder. Pontiff's HP is so dogshit that if you parry him and get lucky with his attack patterns you can kill him in under a minute. Lorian/Lothric are much more unpredictable and have some nightmarish combos if you get unlucky.

A Luck build is based on Hollowing, both the infusion and your character, since you get a free 5 Luck from 16 (or so) or more Hollowing, and the infusion scales from Luck.
You can also throw in some status effect like Bleed or Poison, since Luck affects their buildup as well, though Bleed is often the better choice in that regard.
Other than that, it's just like any other build. Keep in mind you get two Hollow gems per NG cycle, and they're incredibly rare to farm.

That's because both bosses value different things. Aldrich is fighting Crystal WizBiz again whether it looks like it or not. Staying on him (except when he's burrowing or if he manages to get out his bow) trivializes that fight.
Pontiff, on the other hand, really is more about being careful and waiting (assuming you aren't using parries or the like) to attack between his strikes. I really think people having issues with Aldrich are simply fighting him wrong, whereas people struggling with Nameless/Pontiff/etc are just losing wars of attrition trying to chip away at the boss while rolling through their stuff.
What a lot of people who claim the latter are so easy do are wear the grass crest shield, rings to buff the rolls i-frames, and two-hand whatever strong weapon. So not only are their rolls stupidly good, but they have to survive the fight for a lot shorter duration.

Yep. Got greedy, got punished for it. After a while, I cooled down and chipped him down. But I did have to mash R1 for when he summoned his Stand though, and chuck some lightning spears at it. Fun boss fight overall.
Honestly, I enjoyed most of the boss fights this game. A lot more than DS2 at least. Honorable mentions goes to Deacons of the Deep and giant Skeletor-man for fun times. Even the Crystal Sage had a fun gimmick.

Personally, I would agree with you on how I found the fights.
But if I imagined myself as a newer player, I would definetely have found iudex, vordt, oceiros and demon king fairly challenging.
And this is only because having recently played dark souls 1 after 1-2 years of absence, I facerolled every single boss dying max twice, usually none.
Dark Souls 3 "easy-mid" bosses might have been a lot easier for me now, but I imagine that I would have had even more difficulty with these lot than I did in Dark souls 1 on the first go.

You are misunderstanding the point, nignog. Most people can chase down Crystal Sage and hit attack. Most people cannot parry, at least without practice. Even if YOU can, it's still less challenging to hold run and then hit attack than it is to time parries against Pontiff unless you've devised some sort of strategy or practiced, both of which necessitate more skill/time/thought than just run and attack.
To put this a different way: most people would rank Maneaters among the toughest bosses in Demon's Souls despite the fact you can cheese the boss through the fog gate or even use magic and just obliterate them, unlike several other bosses. They are still considered difficult because they require specific strategies that go beyond what most people would generally use.

Parrying has fewer iframes than rolling, and you're screwed if you mess up, unlike rolling where you can also dodge physically instead of just phasing through with iframes. Rolling is more forgiving than parrying. Parrying is "all or nothing".
Of course, if you're an MLG l33t pr0 that can parry perfectly 100% of the time, then it will obviously seem like parrying bosses is a lot easier than rolling, but for players who aren't at that level, it will seem a lot harder. (Because they will try parrying and then fail.)

Dancer is counter-intuitive. Stick to her front left leg (that's your right) and a TON of shit she does whiffs. If you try to stay any distance at all she is frustrating. She's also a boss that soul level/HP matters a lot, since early on she can easily 1 shot or combo you to death. She really isn't that bad if tackled appropriately, but she is infuriating since it's tough to learn her if you can't tank a hit.

Shoot one, climb up the ladder partially. Plunge attack, and then for me that stunned him so I actually got a critical as well, which killed him. Either way if you stay near the ladder you won't get the other. After one is dead, you can fight the second normally.

If you stay close, the back brother rarely does and you can cut down the cycles to just 2 (first without the brother, then one fall off) if you focus on rolling behind and getting the back in between hits. The real dangers of the brothers are post-teleports.

However, we made 90% of the enemies in the game stamina machines with magnet spears/claymores, that if you circle strafe they instantly spin around, or shield bash you for your stamina, and chain sixteen attacks together.
