First time I played Super Mario World, it felt like this gigantic adventure with so much to do.

This here is the real shit though, big world map with a good amount of branches, reasons to go to every stage and minimal annoying backtracking. Best of all, the requirements for 100% completion aren't going to make you want to die.

Probably skyrim, although it wasn't the main story that did it. It was wandering around and exploring on my own.

Points of interest were copy-paste Far Cry garbage, and dungeons were few and generally uninteresting.

Also, the fact that you couldn't play your own character, and that progression, both character and gear wise was awful, factor in as well, though I do understand that they kinda shot themselves in the foot anyway by going with a fixed character, in order to deliver the story.

If a game has fast travel and is open world, it greatly ruins the whole "great journey" feeling. Skyrim, Oblivion, The Witcher 3, all suffered from this.

Older games like Morrowind (which restricted fast travel to boats or silt striders) didn't have this problem.

This. Oblivion and Skyrim capture some of that feeling, too. You can hate TES games for any number of reasons, and even fans of the series can't reach a consensus on which ones are most deserving of hate, but they provide large worlds full of content and the free-form gameplay required to make all sorts of journeys possible. They're player-driven rather than narrative-driven, and the most memorable journeys in them often have nothing to do with their main quests or any prewritten questlines.

What all that really means is that if you have the imagination and motivation to want something cool to happen, the game gives you the tools and the mechanics to make that happen, and that becomes a journey.
You might try to become powerful enough to kill a god, then literally polish your shoes with his soul so they let you walk on water, teleport, fly, or jump over mountains.
Or maybe you want to herd every single Khajiit in the world onto an island to be slaughtered with a single massive area spell.
Or maybe you want the simple things in life like a 20 skeleton army. You find someone who can teach you how to summon a skeleton, train your magical abilities enough to reliably summon 4-5 on your own, and collect powerful enough souls and valuable enough items to enchant with temporary or permanent summons to further bolster your ranks.
Or maybe you just want to beat the main quest after having committed a total genocide, even having killed the fat elf that makes the almost-total-genocide route possible. Preparing your character for that can be a bigger journey than the main quest itself.

You decide what kind of character you want to become and what kind of things you want to do, and then accomplishing them becomes a long journey taking you all over the world, completing quests and finding new things along the way. But if you aren't excited by all the possibilities or can't figure out what you want to do, then the lack of focus of Bethesda games will likely bore you.

Not really. The game was designed that way ,with the story guiding you but not restricting you in the areas you visit. The different brush powers are basically keys to unlock other parts ,secrets and collectibles and you alternate liner parts (dungeons) with more open parts where you can basically go wherever you want granted you have the right power.

That's a fucking perfect definition of an adventure. Some heavily scripted sequences coupled with an overworld that needs key (powers or items) to explore fully

Agreed, I would have mentioned it but my post was already way too long. Daggerfall's a different beast from the others since it's not as much of a sandbox, but the gigantic world and reputation mechanics work together to create the same kind of player-driven journeys.

I spent a few in-game years doing quests for nobles in Sentinel so that I could eventually betray them in those two ones that let you get Daedra/Orcish rep. And then I finally summoned Nocturnal and was able to accept the quest (this was extremely expensive because I don't savescum the failures) but got a letter from Baltham (from a multi-part Mages Guild quest) and my vampire clan at the same fucking time, leading me with three quests in two regions on opposite sides of the Iliac Bay and not enough time to complete them all, forcing me to decide which promises I was going to break and figure out how I was going to just barely manage to not completely fail two of them.

Putting aside the emergent journeys that most TES games share to varying degrees, Daggerfall stands out as the only one with a main quest that managed to feel like a large journey as well, in my opinion. It's a shame that it's so damn easy to fuck up so most people miss out on it.

The thing that I liked about Xenoblade Chronices was it was the first game I've played since Xenogears that starts small and every couple of hours you get this twist that makes you rethink everything you thought you knew and broadens the scope of the game. Then when you go back and play it again it seems like the most obvious thing in the world.
