Vanilla sword gives the most reliable consistent damage. 100% means it will never miss and in 100 swings will have given 7,500 damage.
Chocolate sword deals higher damage which may be good for clearing smaller creatures but has a miss chance. In 100 swings, given the miss chance, it too will have dealt 7,500 damage if it hits every time it is supposed to, but with the potential to miss or hit, it has a predictive range of 6,500-8,500.
Strawberry sword just blows and is all over the place. In 100 swings, with 70 being hits, 30 being misses, and 25% of the hits being crits, you're only looking at about 5,280 damage output. Even if you give it a wider crit margin of 40% of your hits being crits and still landing 70 of the 100 swings you'd be looking at 5,880 damage.
In short, vanilla = chocolate >>> strawberry.

Depends on how damage reduction/defense works in the game.
If the enemy has 60 defense and that mitigates 60 of vanilla's damage, you're doing 15 a hit. Meanwhile for chocolate you're doing 40 a hit for a reasonable 75% of the time.
But if the enemy's 60 defense means it cuts damage by 60% then it don't matter.

Strawberry's description is ambiguous

One can only assume that based on the stats given, that defense is not a factor. There could be tons of other stats, agility, evasion, toughness, status effects, damage reduction... But there's no sense in worrying about them because they aren't mentioned.
Chocolate is most likely superior because in 100 swings, if chocolate hits 71 times it has beaten vanilla. However, I like vanilla for consistency. It will always do 7,500 in 100 swings where chocolate works in a range because it can miss.

Chocolate and Vanilla are basically the same damage output, assuming that chocolate misses every fourth attack; however, if chocolate can randomly miss three attacks in a row due to that unlucky 25%, then it makes a major difference. I'll go with Vanilla to ensure I never miss, the 25 damage gap is small enough that it'll make up for it if Chocolate users miss a bunch. Strawberry is just shit all around, it would be better of double damage was a 40% chance.

Chocolate and vanilla swords both work out to 75 damage per hit overall, of course. Strawberry is a sucker's game.
If the 25% roll is applied after the to-hit roll (that is, an attack only has a 25% chance to do double damage if it has already passed the 70% attack roll), then it will average 52.5 damage per attack. If the two chances are combined into one roll (i.e., roll 1-25 to do double damage, 26-70 to do normal damage, 71-00 to miss), then it will average 57 damage per hit. If, under the best case scenario, the sword has a 25% chance to do automatic double damage, and only rolls to hit if that misses (i.e., the if you fail the 25% roll, you roll 70% to hit), then it will average out to 72 damage per attack - still falling short of chocolate and vanilla.

All of the armor suck for bossing. Not a single one can save you from a fatal blow beside maybe the brown one if you get lucky and reach a threshold where the attack is strong enough to get you below 25 HP but weak enough to not kill you. At that point you may as well just get blue if you are willing to gamble that much or Cyan as it is literally the same thing over the long term without the gamble.
The only place these armor would be decent for is grinding/farming. Pink would be the best as it have the potential of healing more damage than it takes. Hell there is a major clue of what the best armor is from the start. "Attacks cannot be reduced to below 1 damage".

Chocolate misses 25,000 attacks of the 100,000 and does 100 damage for the remaining 75,000 breaking even with Vanilla at 750,000 apiece.
Strawberry misses 30% or 3000 of the attacks. 25% of the remaining 7000 attacks are crits - 1750. That's 214,200 off of crits and 5250 normal hits at 321,300 for a combined total of 535,500.
