It will never be nearly as good/broken as in DeS, but the Butcher's Knife is great in DaS3.
In fact so far it is the only weapon that makes a Str only build feel even remotely decent. All the slug hammer/great hammer/ugs feel like shit especially if you're going strength and no points in dex. Weapons like the Dark Sword require near 20 dex anyway so you might as well just go down a quality or dex path.
Butcher's Knife is gotten really early in the game and is surprisingly fast and has great range. It does shit tons of damage with very little investment (can't be infused or buffed, but also just takes regular titanite) and has an A scaling in strength from the beginning.
It has made most bosses and enemies so far trivial, even ones I had struggled with early on with my Dex/Luck build. It helps that I could afford to immediately put 40 points in str to get the best value out of the weapon.
What should I switch to for the late game? I hear Yhorm's Machete is pretty much the exact same weapon, but with more reach and power. Is this true? If so then it is an obvious pickup for me.
I was excited to try Smough's Hammer and Fume UGS, but weapons like that just don't seem viable anymore.

Forgot to mention that I am bummed out about how pathetic the lifesteal is outside of using the skill, which of course has a STUPID long startup to trigger.
That and while I do love the butcher's knife, it just isn't beefy feeling enough. There isn't much power behind the swings. It's so fast and clean feeling it might as well be a dex weapon despite its appearance.

I have this question about the profaned greatsword too as I hear it is an excellent strength weapon. With no points in fire scaling stuff will I be doing poor damage?

I've been having fun with it, its moveset is basically all vertical attacks, there's some hyper armor on the L2 which can be used as a bait. 40 faith/40 strength is ideal; I have an AR of 630+ with a +4 Dragonslayer GA. Swords can't stun you out the L2 when he's about to drop it, breaks shields. Make sure you have 30 stamina so you can do 4 1H swings you'll get 3 2H swings and maybe two or three rolls. Seems like most of the heavy weapons require you to get good to play.
Oh and the 1HR2 being a lunge attack is really stupid. It's slow and the damage isn't worth it. You could just do a jump attack anyway. It's too bad the only reliable R2 comes from 2H. The 2H R2 is great though.

You get around 590 Physical damage and 130 something lightning cause split damage. I've been using the Sunlight Straight Sword to put sacred oath on me before I pvp.

It's pretty amazing that the sunlight straight sword's buff applies even if you switch weapons. I miss the fume sword, but the SSS is quite godlike in this one. Fume Sword had my favorite moveset in DaS2. The reach was so satisfying. Damage output was never anything special on it, but it was just a really solid weapon.
Would have liked to have seen the Fume Sword return as well.

From the first bonfire in the Road of Sacrifice when you go to the lower part of it and turn back you'll fight a lady wielding it. Alternatively you can drop down a little earlier yourself. You'll take fall damage and will be behind her. There's no point to doing that though.

Forgot to mention that it really sucks how linear this game is. It's probably my favorite Souls game overall, but the linearness of it is really frustrating. I have the stats needing to wield that weapon and I could probably breeze through the area to get to him, but there's no quick way there I have to go through the cathedral, catacboms, farron keep, and then rush the dungeon and rush through the dungeon all to get the weapon I'll barely get to enjoy in the NG playthrough.
I wish you had fought the dancer earlier, such as after fighting your first lord of cinder. That way they could have had that open up more areas and be more of a halfway point rather than a near end game thing. Even if I kill the Dancer at SL1 it barely opens up anything for me.

It takes eight more dex so depending on how your build was going it might not be as much of an option.
It's a bit of a shame just how much weapons outclass each other in this game. I guess they will never really figure out a way to solve that problem. There are a lot of weapons in this game, but it honestly only feels like 10-15 are viable and the rest are just shitty versions of it.

Why do people complain about straight swords in pvp so much? Why don't they just, I know this is crazy, use multiple weapons depending on the situation? If you're getting lots of straight sword dorks then just use a weapon that out ranges them like a halberd or spear. They can try to spam R1 all they want but they'll never reach you.

It's a little underrated. You can get a good 1,2,3 combo going before you run out of stamina.
It's skill is fairly decent. A quick sweep.
