Demon's Souls and Dark Souls were essentially adaptions of DnD lite choose your own adventure fantasy books. Combat was slow and simplistic because the encounters were built around using strategy and patience to deal with traps and ambushes. Generally speaking, the individual areas had their own gimmicks and were pretty short so you were often struggling to adapt to the new challenges in your path. Combat wasn't really the focus, it was how you dealt with every step potentially leading you into an unseen deadly situation.
Dark Souls 2 is a game where you spend most of your time running around and smacking enemies and only occasionally you had to deal with unique encounters.
Bloodborne has some of the design in the first two games, but you mostly just end up smacking enemies anyway because of your increased speed and proficiency in combat.
Dark Souls 3 tries to take the best of each game, but only really succeeds in the boss design.

Around half of these stages were so similar to DMS stages, it was great.
Please play through DMS/DS again. Dark souls as a series is going to have it denial-ridden nostalgiafags in the exact same manner as the Zelda series.
Dark souls 1 is to The ocarina of time as Dark Souls 3 is to Majora's Mask.
One game is outright superior in all objective aspects, but those who judge a game based on emotional impact and the dopamine hit it gave them the first time around will refuse to accept it.

I played through both DeS and DaS in the past couple of weeks. None of your examples stand up to scrutiny because enemy ambushes are ridiculously obvious and the consequences for not dealing with them well are severely diminished by your increased mobility.
