Shadow of the Colossus was great for this. The monsters had pieces of armour or whatever stuck on them, which looked like ruins.

Considering the number (25), I'm guessing this was made at the very start of the show, or when the castle wasn't revealed. There's also a certain degree of artist's vision, so that could also affect it.
I think another anon mentioned it, but Dark Souls has some nice castles. Anor Londo in particular has some good vistas. Final Fantasy also has some nice castle designs, albeit they are quite generic.
