You should be able to survive phase one.
Phase 2 hint: The ghost is like a telegraph. Everything the ghost does, the Pontiff will do a second later. Use that knowledge to time your attacks and dodges. He's much less aggressive in the second phase. If you manage to kill the ghost you've pretty much won the fight unless you're a scrub.

To add: After you kill the ghost, keep the pressure on the Pontiff. If you let him breathe he'll back away and summon the ghost again immediately, which would be bad.
Ideally, after killing the ghost, you'll want to aggressively attack the Pontiff until he has about 20% HP left. Then you can back away and let him start his summoning again, which will give you plenty of time to finish him off.

You can kill the phantom he summons. As soon as I realised this the boss became pretty easy.
Just circle him until he does his dash stab thingy and then walk towards him and dodge that single hit he sometimes does after using the dash attack. Hit him 2 or 3 times and repeat. Second phase is a little harder, but you should try to kill the phantom and then do the same thing as in phase 1. Sometimes after his long combo you can sneak a hit in aswell, if you managed to dodge all of the attacks by rolling instead of just keeping your distance. But the safest way is to just way for his stab dash thing and then go for it.

I don't think that's bullshit at all, because the walk is much shorter and the angles they are shooting from make the arrows dodgeable by just running. You literally just run up there, roll into one arrow and then kill the knights. I mean sure, maybe it's not very intuitive, but that's what Dark Souls is about. It is, and always was, about trial and error. There are countless examples for that in all three games. I tried Demon King once, but I more meant just normal enemies in the area. Irithyll enemies hit me for like half my health bar, and that fountain courtyard showed me I probably shouldn't go that way yet. Demon Ruins has those fucking demons that make little fireball casters, and I got positively stuffed with fireballs.
I think I just need to level and farm for a bit. I'm only 37, I don't know if that's on par or not with these areas but it feels low. I think I'll farm for the Corvian scythe so I can use something slightly more interesting than the Dark Sword that still goes with my theme and try PvP for a bit.

Every single boss is designed as a 1-on-1 (or however many enemies the boss is). Solo, you're under pressure the duration of the fight, since the bosses won't let you breathe. Co-op has the boss focus on only one person at a time, while the others can either kick back, take a breather, or swarm him until he dies. I had to get summoned 30 times for Sunlight Medals, so I had my sign up at Pontiff for all of them. It was probably the most boring Souls experience I've had.
Though I will admit, with this boss, there is an aspect that had some co-op consideration. His shadow that he summons in his second phase normally sticks to him in a solo fight, and will attack before him, followed by him mimicking the shadow. In co-op, the shadow stays separate from him and will focus on someone else.

Yep, there's invasion slots and co-op slots. I think you can be invaded by 3 people but you can only summon 2 invaders. I don't know how but I had a 3 v 3 in Farron one time through invasions. If you could get some co-op slots filled you could chain fights hence me bitching bout no white signs.

The first phase is far harder than the second though.
First phase he has almost no cooldown between his attacks and spams at you until you run out of stamina and get whacked.
Second phase virtually all of his moveset is replaced with easily telegraphed garbage. Just wait for him to do a really slow aoe attack then run in and poke him a few times.
It's really hard for me to tell similar attack telegraphs apart, and I usually just dodge as soon as they pull back. It wouldn't be a problem if so many bosses didn't hold their weapons back for 10 seconds before slashing.
But yeah, I didn't have much trouble with Pontiff. So far I've had the most trouble with Dragon Armor and Abyss Watchers.

This boss like his minion around the area, have no poise and hit lightly. I used a strong medium shield and the boss just couldn't get any damage on me. I could take 3 regular swings before having to dodge from lack of endurance drain.

My friend is at 30 VIG and he just got to abyss watchers. He can just spam r1 and chug until he wins and he still kills the boss fast enough that he doesn't even see all of the bosses attacks before it's over. There are quite a few builds that make the game a joke.
