Because the game development cycle takes much longer.
25 years ago a game took 6 months to make on average from start to finish.
Better graphics lead to bigger work load which leads to less shit coming out.
Nintendo is not the only company that suffers from that.
All of them do. Especially the japanese ones.
Only cancer like EA, Ubisoft and Warnerbros benefit from this.

Game development takes much longer.
The other is that Nintendo releases as many games as it used to. It doesn't shit out three iterations of the same franchise every year. You get your flagship 3D Mario, the NSMB, and the gaggle of spinoffs and experimental titles.
The Wii was the outlier in that we got Mario Galaxy 1 and 2.
They do though
