Wow it was actually pretty easy this time round, just kept my shield down and rolled my way to the sun
Managed to backstab him when he was at half and then got the stun lock with the broadsword

A lot of the boss battles are much easier if you stick close and roll into attacks so you can strike from behind. This fight was the hardest for me took me 15 tries, each and every try I had him to 1/3 health or lower, so he was pretty fair as far as bosses go.

I actually beat them on my first try, which felt amazing. Only had a tiny bit of HP and one Estus flask left at the end of the fight.
