They went into Dark Souls with the goal of making a very vertical world where a lot of areas layer over other areas, making it quite easy to create lots of paths to and from various places through spiral staircases and elevators. The other games spread outward horizontally, for the most part, so interconnected level design would require more careful level and asset design.

The same guy who did the one in the OP, and some other illustrations regarding Dark Souls world design, also did ones for Demon's Souls and Bloodborne. They aren't intended to be 1:1 representations.

I don't find linearity a problem as long as the individual level design is great.
Even in System Shock 1-2 the world is linear, as well as Deus Ex.

Is this actually accurate? I mean of course it's simplified, but it's to the point that I can't really map out Lordran to that depiction of Dark Souls.

Was DaSII that linear? I didn't play it.

Fuck this annoyed me so much in Dark Souls. There was clearly supposed to be a whole other area between sens fortress and anor londo that got cut because of time and money or whatever and they just replaced that area with lol flying demons and it's okay because it's a des callback.

After you get out of the asylum, the first point at which you get magically transported somewhere else is when you reach Anor Londo. Before then, Dark Souls' world is basically interconnected from Blight town to Darkroot Garden and then some.

In DkS2 there a few major paths that are basically all one-way paths where you rarely come by a bonfire you previously visited.

In DkS3 it's somewhat linear with some branching, but every so often you find yourself running back to the same bonfires and what not (Cathedral of the Deep, for instance).

if you look it already kind of does that near the end point on the dark souls one, theres a clear four point divide that shows when you go in the straight lines between the 4 souls you have to grab before the kiln, lost izalith and papa nitos are around areas you can explore ealier so they interconnect slightly to the previous web of paths
