I've never played a Dark/Demon Souls game, ever.
Do I need to know the story of all the previous games in order to play DS3? Or is it playable on its own?

The stories in souls games are either simple or rather convoluted depending on how much of a lorefag you are. you'll probably miss out on some secrets that help explain it on your first playthrough

I'd probably start with Demon's Souls if you have a PS3 just because it's so clunky compared to the newer games, and going back might be harder than going forward.
As for stories, each game has their own little stories that are concluded in each individual game. There's not much overarching stuff with the games. Playing Dark Souls before Dark Souls 3 might be a good idea if you like the feeling of nostalgia though, there are a few things from the first game that return.
